

This morning I made biscuits, I had some Canadian bacon and a few eggs in the fridge and was in the mood for a breakfast sandwich. I didn't have any buttermilk and I didn't want to use up any of our milk so I substituted plain yogurt in my recipe. I was very hesitant but I took the plunge and made my biscuits and they turned out fabulous. I only made a half batch in case my experiment failed.

I have begun using fat free plain yogurt in place of some or all of the oil in recipes. It won't always be the same consistency as by using oil - but it's healthier and works when you don't have any oil on hand.
When my parents were missionaries in Southern Europe back in the nineties we were told in a cookbook put out by our church to use yogurt as a replacement for buttermilk and it always worked...
We could not get any buttermilk at all.
